Should be pretty close to Mac and Jack’s African Amber, possibly a little stronger, surprise, surprise… Name after Animal Kingdom resort in Disney World to celebrate our upcoming trip. Waited a little long to brew after the grain was crushed, but otherwise a pretty decent brew day.
10B. American Amber Ale. OG: 1.060. IBU 43.
Notes:
- Waited 1.5 weeks after grain was crushed to brew
- No starter, used White Labs British Ale Yeast (WLP005) for higher attenuation than 002
- 10/10/10: Brewed
- Mash: 4Qt., strike at 161 degrees
- Sparge: 2Qt at 171 degrees
- turned heat off for 5 minutes at 45 minute mark while I was fighting with the LME; waited to add Cascade until 68 minute mark
- pitched at 78 degrees
- gravity at 3 gal: 1.100, at 5 gal: OG: 1.060
